Like a true New Yorker, I've never been to the Empire State Building, or the Statue of Liberty, so I can't really comment on them. We've got the Metropolitan Museum of Art, which is way cool, even if yo'ure not a painting guy. They've got a whole gallery of mideaval weapons and armor, and their Egyptian gallery is amazing, complete with an entire temple that was moved there. The zoos and aquarium are pretty cool IMO, then again, I'm an animal person to begin with. Central park is pretty cool; they've even built a small castle in there. Rockafellar Center is neat in the wintertime, with the tree and the ice skating there. Plus there's a huge bronze statue/sculpture that my great-grandfather delivered when it was ordered.
Just if you go, be prepared for crowds, and lots of them, at least on Manhattan. In thick crowds, watch for pickpockets (like anywhere in the world with crowded places, they're here in New York). Also, stay where there are people out on the street. Makes you less of a target. Being an outsider, avoid Brooklyn and the Bronx if you can. For the most part, they aren't the best of neighborhoods to be walking around in (especially if you've got pale skin like me lol).
